After pressing our estate grown red wine, the left-over pomace was added to freshly pressed apple juice from our younger trees. The mixture fermented for a week before re-pressing for maturation in tank. This dry, sparkling cider pours a pale garnet. The nose is delicate with hints of raspberry, cherry, and apple. The fruits continue on the palate, along with minerality and a refreshingly acid finish. This cider is very food friendly and pairs well with just about anything.
